The science

Five ways we keep fruit fresher.

Fruit keeps living after harvest. Each of these technologies targets a different reason it breaks down on the way to market.

Ethylene removal

Ethylene triggers ripening and spoilage in most fruits and vegetables, and causes storage disorders that end in loss and waste. Remove it from the air and storage life goes up.

Receptor blocking

1-MCP binds to the fruit’s own ethylene receptors and delays ripening, so apples and other fruit keep their firmness and crispness longer.

Protective coatings

A semi-permeable wax film improves gloss, slows ripening and yellowing, and cuts weight loss from water evaporation.

Modified atmosphere

MAP bags reduce respiration through controlled gas exchange, which lowers ethylene emission and holds moisture in the fruit.
